Serge Peuzin's recipe

for Gizzard salad with Honey Vinegar and Candied Melon
.

Ingredient :
- 1 crisp frizzy lettuce
- 300g duck gizzard
- 2 good-sized slices of candied melon
- 1 dl of honey vinegar
- Salt, pepper.
Preparation :
- With a melon scoop, cut out small balls of melon.
- In a hot frying pan, saute the finely sliced gizzard and melon balls, until lighly browned. Remove from pan.
- Add vinegar to pan, salt and pepper to taste.
- Place the gizzard and candied melon balls on the lettuce and dress with the warm vinegar.
